Olive Garden Chicken

I do use Olive Garden's Italian Dressing but this can be done with your favorite Italian dressing.

I originally saw this marinade on YouTube. I wish I could tell you the channel but it was a couple of years ago and I honestly don't remember. She was a little nutty and lived in Florida. I did enjoy her content though.

My kids absolutely love this marinade when I use it on chicken. I also hadn't had any complaints when I used it for some pork. One one occasion I swapped out the Italian Dressing for a Caesar that made some wonderful chicken.

I've also used lemons on one occasion with great results. I haven't tried orange yet but that is on my bucket list.

Ingredients

  • Olive Garden Italian Dressing (Size depends on how much you are cooking)
  • Juice of 2 Limes or Lemons
  • 1/4 Cup of Honey
  • 2 Lbs. of Chicken

Directions

Step One

Step One

Get your Italian dressing and empty it into a bowl that will handle your marinade and chicken.

Step Two

Step One

Squeeze in the juice of 2 limes.

*What I like to do is put them in the microwave for a few seconds, no more than thirty. I've found that this helps to increase the about of juice you can squeeze from them.

Step Three

Step Three

Here I've taken 1/4 cup of honey to the marinade. My honey was a little crystalized so I put it in the microwave for a few seconds. That's why it looks so watery. You may want to spray a little Pam in the measuring cup it makes it easier to get the honey out.

Step Four

I know you're thinking, oh my goodness she is putting in frozen chicken into the marinade. But remember what I mentioned, I live in Arizona. This meat isn't going to take much time to defrost. Now if you are using defrosted chicken, I wouldn't leave it in the marinade for anymore than 2 hours. This does have lime juice in it so the meat can become mealy if left for too long.

Finally

Epilogue

I'm not going to set up and make you watch me grill chicken. Can you put this in a pan, sure, but it taste so much better cooked on the grill. Make sure that chicken breast come up to 160 degrees and legs plus other dark meat can go until it reaches 175 degrees.

Serve this on some hamburger buns with a little arugula, mayo and possible a large green chili. At least that's the way we like to each it.
